Set on the far side of the eponymous national park, a third of the way around Iceland’s circumference from Reykjavík, Fosshótel Vatnajökull is a hotel of a type that’s become familiar: a contemporary structure with a traditional silhouette, combining utilitarian materials and modernist-classic furnishings in front of vast windows facing spectacular natural vistas. Here it’s the Vatnajökull glacier that provides the visual interest; with 66 rooms it can feel lively, but even at capacity it’s not exactly bustling. The hotel’s restaurant leans heavily on the langoustines harvested by the local fishermen. It’s an ambitious destination but worth the drive.
