A long, uphill straight runs through the historic centre of Caprarola and leads to the extraordinary Palazzo Farnese. Before reaching it, on the left, lies a stop no less famed, at least gastronomically speaking. The figures alone are impressive: housed in a building dating back to 1370, run by the same family since 1895 and now in its fifth generation, this is a temple of Tuscia cuisine, northern Lazio, albeit with some Tuscan influence. Here one finds dishes so full of flavour that one would happily eat them every day. No less significant is the wine service: around 900 labels, with a wide choice also available by the glass, expertly managed by Samuele Calistri, the cook’s son, who returned to the family after significant international experience in starred restaurants to carry on the legend of this extraordinary trattoria.
