In a trendy bistro decor, to a soundtrack of jazz and R&B, chef Mélanie Sire serves up dishes that echo market availability of ingredients. Skilfully playing on textures and flavours, she prepares simple but delicious plates, including creations such as the beautifully presented trilogy of oysters, or the perfectly cooked pluma ibérica pork.
