"Chef-patron Enrico Mazzaroni's link to the land is strong. While many ingredients are homegrown and farmed (vegetables, chestnuts, truffles, lamb...), everything else is sought from the very small producers living nearby. The restaurant is located within the Monti Sibillini Natural Park and is part of the Agrarian Community of Isola San Biagio, which is responsible for the protection and support of the land and residents of the mountain areas."
