Many of Sofitel’s MGallery hotels are buildings with impressive histories, special locations, memorable looks, or some combination of the three — and it’s fair to say that La Cour des Consuls Hôtel & Spa, in Toulouse, ticks all those boxes. It occupies a pair of centuries-old townhouses on the rue des Couteliers in the picturesque Carmes district, just to the south of the city center, which have been divided into a mere thirty-two elegant, classic-contemporary rooms and suites.

They vary widely from relatively humble Superior rooms to the three-room Executive Suite, but they’re all stylish, solidly comfortable, and packed with luxe details like Nespresso machines and Graine de Pastel bath products. The houses’ period architecture is well-preserved, and the interior-design style updates the look with references to an eclectic range of eras. La Cour des Consuls has also found space for a gorgeous little spa, as well as a fine-dining restaurant, Le Cénacle, and the Champagne Bar, whose concept is rather self-explanatory. Luxury-hotel comfort, boutique-hotel style, and historic hotel character — it’s anything but another typical chain hotel.
