Standing within the walls of the fortified city of Aigues-Mortes, La Villa Mazarin is a classic: a 15th-century house made of golden-hued stone. Only an antique Provençal interior style could do justice to a setting like this; the hotel’s 23 rooms and suites are modern in function but historical in style, and neither the accommodations nor the public spaces shy away from ornament. There’s an indoor pool alongside the courtyard as well as a jacuzzi, hammam, and sauna, and the hotel’s restaurant, occupying a particularly ornate salon, serves elevated regional fare from local ingredients.
