MICHELIN Guide’s Point Of View
Dating back over 300 years, this establishment, once a smithy and locksmith's shop, has a rustic-meets-historical charm that beautifully incorporates more modern features. French-born chef-patron Stephan Koltes uses exclusively regional produce to create modern cuisine that is full of contrasts. The individual courses of his set menu are each available in the form of two small dishes made from the same ingredients – an enticing option.
