MICHELIN Guide’s Point Of View

The owner-chef places great store by the seasons, especially the first and last harvest seasonal ingredients, and occasionally incorporates Western-style elements. Kobujime and seared raw fish slices go into the ‘Sashimi Sandwich’, for a fusion of Japanese and Western. The vinegared rice with soy sauce goes well with the thick-sliced sabazushi. The evening offers both à la carte and omakase options.
