If you didn’t know the Alsatian town of Colmar had a “little Venice,” now you do — Le Colombier stands at the entrance to this district, whose timbered houses crowd the edges of the River Lauch. From the exterior it’s a perfect example of the local style, a row of 16th-century houses joined into one; from the inside it’s a surprisingly contemporary boutique hotel, hewing to the twists and turns of the existing buildings but finishing its spaces with a modernist-inspired crispness. There’s a tiny spa as well as an organic breakfast and a charming open-air courtyard lounge.
