MICHELIN Guide’s Point Of View

The owner-chef was drawn to the grilling of meat, with all its many ways and means, and prepares it using French techniques. The menu includes homemade-style ham, wagyu, brand name pork, French-produced duck and pigeon. Ezo deer and wild boar are added to the menu in the autumn and winter. Using a charcoal flame and low temperature cooking, he puts the natural flavours of the ingredients to work. At lunch there’s also curry and hamburgers.
