This oden restaurant is operated by a dashi maker. Popular items include the dashimaki tamago made with its signature dashi and, in seasons other than summer, the daikon and seasoned octopus. The inclusion of items like caciocavallo cheese and the à la carte uncured ham shabu-shabu dish on the menu comes from the head chef’s background in Italian cuisine. The dashi is utilized up to the end, including in chazuke-style rice and Chinese soba-style noodles. Another unique touch is the katsuo-bushi-shaped chopstick rests.

Commitment to sustainable gastronomy
Initiatives
We engage in recycling-oriented farming and use livestock droppings and rice bran produced in the area as fertiliser on our fields. We make our dashi using vegetables grown in environmentally responsible ways.
