MICHELIN Guide’s Point Of View

The owner-chef learnt the basics from his father, who ran a soba restaurant. Using a stone mortar, he grinds soba from various parts of Japan and turns it into nihachi, kyuwari (1/10th of flour) and juwari soba of varying thickness. The Tokyo-born chef prefers Kanto-style sauce with soy sauce added for extra punch. Here is famous for its brand-name duck from Osaka. For snacks, we recommend the salt-grilled duck and for noodles, the duck seiro or the kamonanban.
