The result is a fresh, fun and spontaneous cuisine that aims to elevate Peruvian food. Anticuchos, either the scallop with aji amarillo tartare and crispy capers or the beef hearts with aja panca and rocoto salsa, are packed with flavor, while the ceviche also delivers with an added crunch courtesy of deep-fried plantains. Duck sausage over a bed of cilantro-spiked rice studded with spinach and choclo is another hit.
