MICHELIN Guide’s Point Of View
In the heart of Lyon's old town, Jérémy Galvan has set up shop in one of the streets in France with the most Michelin stars – rue du Bœuf. Born in Savoie, the chef's path took him to Quebec. As the grandson of market gardeners, he is a proponent of locally sourced food; he takes very seriously the need to protect the planet and the farmers who live off the land. Inspired by nature, he grows some ingredients in his own vegetable garden, and his creative cuisine (one surprise set menu) is now something of an artistic experience: calling upon the five senses – it includes music – and the four elements, it is daring as well as breathtaking! The interior decor is a continuation of the ethos of the place (e.g. evoking fire through the colour bronze). An experience you will want to linger over!
