Dating back over 300 years, this establishment, once a smithy and locksmith's shop, has a rustic-meets-historical charm that beautifully incorporates more modern features. French-born chef-patron Stephan Koltes uses exclusively regional produce to create modern cuisine that is full of contrasts.
