The surrounding vegetable gardens, fields, and glamping tents form the backdrop to this ode to Friesland. Chef Kees and gardener Christiaan have joined forces to showcase the finest local produce. Everything is either homegrown or sourced from nearby suppliers. In his set menu, the chef skillfully marries the hearty flavours of Friesland with a touch of sophistication, in dishes characterised by vitality and freshness. Think North Sea sole, delicately marinated in lemon, enhanced with local bacon and expressive garnishes of sour cream, fennel, lemon, puffed quinoa and paprika sorbet. A digestif by the campfire makes for the perfect ending to a uniquely serene experience.
