This superb hotel and wine estate boasts enchanting surroundings to be contemplated through the bay windows of the dining area. Favouring seasonal produce from the southernmost reaches of France, the chef composes elegant, meticulous dishes that steer clear of bells and whistles. His creations abound with personality and flavour, eg roast saddle of Lozère lamb with artichoke and Collioure anchovies – best enjoyed with one of the estate's wines.
