Valencia’s Old Town has some fine historic hotels, but perhaps none as notable as this one, set in a 14th-century Gothic palace that served as the private mansion of the Marquis de Caro. It’s the city’s only historical monument hotel, and Caro Hotel leans into the official designation, proudly showcasing a 12-century Arabic wall in its restaurant and medieval coffered ceilings and Moorish archways in the guest rooms. The otherwise modern and minimalist design, with monochromatic decor and sophisticated lighting, evokes the stage-like atmosphere of a contemporary art gallery — all the better to let the building’s historical elements shine. The chic library and multiple outdoor terraces, one with a plunge pool, add to the appeal, as does Alma del Temple, a striking restaurant where both the design and the cuisine take inspiration from the city’s Roman, Arabic, and Christian roots.
