El Alma feels like a culinary journey, as the dishes hail from every region of Spain. The shrimp-and-mushroom ajillo represents the traditional flavours of southern Spain. Salted cod and almond sauce lend the tapas salad a Catalan flair. The meat dishes are charcoal-grilled for a smoky flavour that evokes the Basque Country. The chef, who’s made numerous trips to Spain, aims for an authentic feel that conveys the richness of regional Spanish cuisine.
