From abundant poon choi pots to bountiful yu sheng platters, these MICHELIN establishments are ready to ring in the Year of the Rabbit with auspicious dine-in and takeaway offerings fitting the Lunar New Year.

As Chinese New Year 2023 — the Year of the Rabbit — quickly hops in, plans of where and how to celebrate the Lunar New Year have to be made sooner than later. Despite the holiday rush and frenzy, fret not because the MICHELIN Guide Singapore has curated a quick list of various MICHELIN establishments that have launched their Chinese New Year offerings to make the planning easier.

Whether it's for dining out or dining in, no Lunar New Year gathering is complete without vibrant yu sheng platters and prosperous poon choi. Not forgetting the à la carte specials for some extra luck! Check out the list below!

Two MICHELIN-Starred Shisen Hanten ushers in the Year of the Rabbit with celebratory dine-in set menus, à la carte specials laced with the restaurant's signature Szechuan touch, and takeaway treats for the upcoming Lunar New Year.

For those that want to dine at Shisen Hanten, guests can choose from a selection of eight themed set menus that are available for both lunch and dinner and are tailored for both private gatherings and social festivities. The à la carte menu showcases the restaurant's specialty dishes such as Chen’s Mapo Doufu; and Braised Premium Sea Cucumber Stuffed with Shrimp Paste and Mushroom in Crab Roe Sauce. New items made especially for the Lunar New Year include Stewed Chicken Wing and Mushroom in Red Glutinous Rice Wine; Simmered Sweet Potato Vermicelli with Deep-fried Fish Maw in Spicy and Sour Flavour; and Braised Pork Ribs in White Pepper Sauce served with Golden Mantou.

If dining at home is preferred, the Shisen Hanten Prosperity Salmon Yu Sheng with traditional plum sauce is available in sets good for four or eight, with the option to add more ingredients. The luxurious Shisen Hanten
Abundance Fortune Pot will also be available for takeaway purchase. Suitable for 6 guests, the iconic Lunar New Year pot brings together scallops, sea cucumber, live prawns, and over 15 other premium delicacies in one dish.

Lastly, bite-sized festive goodies such as Golden Pineapple Ingots, Four Treasure Mini Nian Gao, Hokkaido Steamed Pumpkin Cake, Steamed Yam Cake with Dried Scallop, Steamed Carrot Cake with Chinese Sausage, and Shisen Hanten's Signature Roasted Dang Gui Whole Duck are also available.

A contemporary French take on the auspicious yu sheng platter, MICHELIN-Starred Jag pays homage to the Lunar New Year with its rendition of the Chinese New Year staple.

Boasting a bounty seasonal vegetables from France, Japan, and neighbouring regions, the colourful ensemble features vegetables such as orange and black carrots, yellow and red beetroots, green and red radishes, daikon, and cabbage. Symbolising wishes for good luck, vigour, and progress, the curation of produce is articulated in various iterations — raw, cured, and pickled.

Signifying surplus are cured Scottish salmon, smoked Hokkaido scallop, and marinated Japanese shrimps. Wealth and success are represented with watercress crackers, sesame, peanuts, and gold leaf. The dish is tossed and enlivened with argousier (sea buckthorn) with blood orange dressing.

Jag’s Yusheng is available from 05 to 28 January 2023, for both lunch and dinner. Please note that an advanced notice of 48 hours is required.

The Year of the Rabbit beckons a prosperous new beginning at MICHELIN-Starred Shang Palace, with its renowned repertoire of Cantonese culinary dishes coming together for a Lunar New Year’s feast from 09 January to 05 February 2023.

Specially curated by Executive Chinese Chef Daniel Cheung, guests can choose to indulge in the eight-course menu that features dishes such as the Fortune Yu Sheng with Norwegian Smoked Salmon and Poached Lobster; Braised African Candy Heart Dried Abalone; Pan-fried Foie Gras and Roasted Suckling Pig; Sautéed Boston Lobster with Superior Stock; Sautéed Scallops and Pacific Clams; Braised Bird’s Nest Soup; and Steamed Star Garoupa.

Vegetarians will be delighted to know that Shang Place also offers a meat-free option for their course menu, featuring dishes such as Braised Bird’s Nest Soup; Deep-fried Bean Curd Puff; Braised Morel Mushroom with Asparagus; and Five Grain Fried Rice.

If an à la carte dining style is preferred, signature recommendations include the Fortune Yu

; Roasted Peking Duck; Sautéed Lobster; Braised Abalone; and Braised Pork Knuckle. For lunch, a Dim Sum Delights menu is available from 22 January to 05 February 2023 and features Rabbit-shaped Custard Buns; Steamed Clam and Shrimp Dumpling with Caviar; Steamed Jade Scallop Siew Mai with Crab Roe; Deep-fried Prawn; Cuttlefish and Dace Paste in Lychee Shape; Steamed Diced Cod and Shrimp Dumpling; and Baked Abalone Pie.

A limited-edition Auspicious Rabbit Yu Sheng is also set to impress, arranged into an image of a rabbit and is available for dine-in orders from 09 January to 05 February 2023. The Auspicious Rabbit Yu Sheng is served with South African Abalone, Hokkaido Scallop, Local Lobster and Scottish Smoked Salmon, with a minimum of 2 days’ advance order.

At one-MICHELIN-Starred Summer Pavilion, located at The Ritz-Carlton, Millenia Singapore, a MICHELIN-recommended hotel, the Lunar New Year celebrations are taken up a notch with an indulgent Australian lobster and black caviar yu sheng.

Special Chinese New Year themed lunch and dinner menus that range from six to eight courses will also be available from 09 January through 05 February 2023. Diners celebrating the first 15 days of the Lunar New Year at Summer Pavilion will also receive a set of limited edition Ritz-Carlton red packets and a pair of Mandarin oranges per reservation. Vegetarian yu sheng and pen cai are also available for takeaway for those who want to celebrate at home.

To usher in the good luck and good fortune this Lunar New Year, MICHELIN-listed db Bistro & Oyster Bar invites diners to toss to a prosperous year with its lo hei, featuring thick cuts of fresh Tasmanian sea trout and Hamachi (yellowtail). Festive delicacies will also be available such as the soya steamed sea bass for two with ginger and scallion relish and flower crab bisque.

Spice lovers will relish in the spicy Australian lobster in a Singapore-style chilli sauce, as well as jumbo black pepper prawns. Other menu highlights include braised Irish duck for two and foie gras fried rice. For dessert, diners can enjoy db Bistro’s petite signature madeleines dusted in five-spice, or opt for the premium seasonal fruits served with a house-made mandarin orange sorbet.

These à la carte specials will be available for dinners from 20 to 23 January 2023, with menu items subject to availability and offered alongside the restaurant’s à la carte dinner menu. During this period, brunch-goers can also supplement their delectable three-course set brunch with db Bistro’s lo hei.

In celebration of the year of rabbit, MICHELIN-selected restaurant Gaig commemorates this auspicious occasion with a traditional rabbit meat stew. Rabbit meat is well-loved in Catalonia, and while there are various ways to prepare the meat, executive chef Marti Carlos Martinez enjoys it in a stew. Drawing on a time-honoured recipe, the rabbit meat is slow-cooked for 40 minutes with a base of onion, tomato, carrots, and potatoes, and then seasoned with bay leaves and black pepper. Available exclusively from 25th to 28th January 2023, diners can enjoy this special à la carte plate at $68++each for lunch and dinner.

MICHELIN-listed Man Fu Yuan located at InterContinental Hotel Singapore — a MICHELIN Guide hotel — celebrates the Lunar New Year with prosperity prix-fixe menus from 03 January to 05 February 2023.

For a fuss-free menu catering to big groups, the five-course menu features a display of Man Fu Yuan’s signatures including the Abundance Treasure Pot, brimming with over 18 premium choice ingredients such as the six-head whole abalone, lobster, whole dried scallop, South African fish maw, and dace fish ball. The meal concludes with with a chilled cream of pink guava, pomelo, and aloe vera.

The six-course menu, on the other hand, displays more extravagance and includes premium seafood bisque with braised crab meat; pan-seared A5 wagyu beef in Mongolian sauce; braised South African three-head abalone with Japanese spiky sea cucumber; and braised Chinese ramen with rock lobster, superior crab meat, and crab roe sauce.

For à la carte items, premium roasts are also available such as the Roasted Suckling Pig with Five Grain Glutinous Rice, Trio Roast platter consisting of honey-glazed Duroc pork belly char siew, roasted Duroc pork belly, and braised corn-fed "Yuen" chicken in soya sauce and rose dew wine; as well as the Signature Smoked Duck with Long

Celebrate new beginnings on a joyous note with time-honoured traditions such as tossing to abundance, health, and good fortune with yu sheng specials and festive flavours with specially curated home-dining sets by MICHELIN-listed Yì by Jereme Leung.

Apart from its traditional offerings, roast items, and dim sum, Raffles Hotel Singapore's signature Chinese restaurant will offer its anticipated yu sheng platters for dine-in and takeaway. Each yu sheng platter consists of an auspicious selection of premium ingredients brought together by Leung's specially crafted Yunnan rose dressing.

The yu sheng selection comprises four variations: Longevity Yu Sheng, which features arctic shellfish and Japanese sweet shrimps; Prosperity Yu Sheng, which is served with abalone, Spanish Ibérico ham, and honey melon; Fortune Yu Sheng with salmon sashimi and crispy bait fish; and Vegetarian Yu Sheng with crispy cordyceps flowers and fresh mango.
