Chef Lukas Nagl brings his own signature to a proudly regional approach, incorporating fermented notes and Japanese influences – without the need for ingredients from further afield. Star billing goes to fish from the lakes of Salzkammergut, such as gently torched perch cooked to perfection. Another standout is the exceedingly flavoursome, tender crayfish from the Traun River.
