Midway between Madrid and Zaragoza, the agricultural region of Castilla-La Mancha has a tradition of grain cultivation that dates back to medieval times. Though many of its flour mills are no longer in use, one was reborn as the boutique hotel El Molino de Alcuneza.
Most rooms are located inside the restored landmark and feature rustic wooden floors, exposed beams, antique furnishings, and bathrooms lined in hand-painted tile. In a newer building beside the pool, suites are more spacious and modern. All have views over the surrounding wheat fields, and the hotel’s restaurant leans fully into the theme with a menu of seven varieties of homemade bread. Organic wheat, spelt, and rye are the centerpiece of the breakfast spread, too, in the form of irresistible pastries, toast, and cakes paired with locally made cheeses and jams.
