His distinctively expressive cooking is technically flawless and bursting with vitality. The fact that the chef is a master of sauces becomes clear in creations such as a tarragon hollandaise or an Ibérico pork bouillon enriched with basil oil, both of which lend the dry-aged turbot remarkable intensity and roundness. Langoustine dishes – a speciality of his – are also not to be missed: One highlight is a magnificent tail, cooked to perfection on the Japanese barbecue, finished with lime zest and finger lime compote, and accompanied by glazed aubergine, vin jaune hollandaise and a winter truffle and shiro kombu dressing that adds exceptional depth.
