Come for their suadero, which they confit and then simmer in water for a juicier taco. However, don't skip out on their al pastor tacos; they're prepared at a dedicated station with the cook deftly managing the trompo. Tender and flavorful, the meat is sliced ever-so-thinly and deliciously touched with a bit of rendered fat.
