With its dramatic gorges and rock formations, volcanic springs, and terraced vineyards, Ardèche is a hidden gem in the south of France; it’s also where you’ll find the extraordinary Domaine de Chalvêches, set on a tranquil wooded property outside the tiny village of Faugères. In warmer weather, it has a lovely outdoor pool and terrace overlooking views of the surrounding greenery, while the spa, housed in a refurbished 19th-century stone tower and featuring a sauna, Jacuzzi, and hammam, is open year-round. Guest rooms are cheerfully decorated with nature photography, colorful mosaics, and eclectic art and objects from all over the globe. Some have exposed stone walls and walk-in showers; all have Nespresso machines and private terraces with views of the valley.
