Here, owner-chef Pablo Park creates a contemporary-focused tasting menu with an innovative touch that reinterprets Korean dishes and changes in line with the seasons. Chapter 1, for example, takes its inspiration from the Obangsaek, the traditional five-coloured spectrum that brings harmony and balance in this Far Eastern country: red (fire), black (water), green/blue (wood), white (metal) and yellow (earth).
