Renovating a church sanctuary to house a wine bar and restaurant certainly doesn't sound like a Bad Idea to us. It's the premise behind this East Nashville spot, where Alex Burch leads a robust wine program with over 100 selections housed in a custom wine cellar and Chef Colby Rasavong sheds a light on Laotian cooking with shareable small plates. Rasavong spent time in some of the city's top spots, but here his personality comes shining through as he fuses Laotian and Southeast Asian flavors with French techniques. His dishes come together in really unexpected ways, as in the on-point, scallop mousse-filled crêpe, cut into three rectangles all resting in a nam prik blanquette.
