Chef Bryce Gilmore of Barley Swine has turned his hit food truck into this popular spot on South Lamar. It's a casual, come-as-you-are concept where guests can pull up a stool at the massive counter or at a nearby table. Everyone is here for the hearty, decadent American fare designed for sharing. Dressed down with a rustic edge, their Southern dishes with global inflections range from ceviche and chicken heart satay to wagyu burgers and stuffed quail with dirty rice and grilled okra. Maltagliati pasta tossed with corn butter and a surprising shrimp sausage is memorable, while meat-forward dishes, like the impossibly tender pork shoulder, are always a hit.
