In the heart of the Loire Valley city of Angers, occupying a well-loved 19th-century townhouse, is an unpretentiously stylish boutique hotel by the name of Markus. Its living spaces are gallery-like in their minimalism, with whites and neutrals predominant above antique hardwood floors; the impression is only heightened by the presence of some eye-catching contemporary art. With just 14 rooms it’s more or less guaranteed to stay calm, but despite its residential atmosphere it features a proper restaurant: ENVOL, where Philippe Coco serves a five- or eight-course tasting menu four nights a week.
