Ein Stern: eine Küche voller Finesse
This is the 'casa' of famous wine expert Alejandro Vigil, known more widely as 'the Messi of Wine', having been the first to be awarded 100 points by Robert Parker for his two Argentinian wines, namely the iconic 2013 Gran Enemigo Single Vineyard Gualtallary and the 2016 Adriana Vineyard River Stone. The restaurant’s setting in Chachingo comes as a something of a surprise, and is inspired by Dante’s Divine Comedy (the story of a journey from hell to paradise, as well as that of the struggle with the inner self, hence his El Enemigo (The Enemy) wine brand). Following a guided tour of the vineyards that surround the building, guests head to the contemporary yet rustically appointed dining rooms. Here, chef Iván Azar serves up modern menus (an executive lunch menu and two more extensive dinner menus) that showcase Mendoza's seasonal produce, sourced both from the hotel's own vegetable garden and from small local producers (we loved the pork belly with beans and the rabbit with sweet chilli). The team are always dressed to impress in impeccable uniforms, and supervise every detail to elevate the experience!
"Our of our aims is to make Chachingo a sustainable destination, where every inhabitant feels proud of the place in which they live. A great lesson for us has been the ability to think about sustainable work by caring for others, and by this we mean the community of Chachingo."
