There is only space for a handful of diners at the L-shaped chef's table in this restaurant's minimalist dining space. A nine-course set menu is prepared in the fully open stainless steel kitchen – this culinary journey through Korea lasts approximately three hours. Authenticity is key, but local ingredients and European cooking techniques still find their place. This results in intensely flavoursome dishes such as "gochujang ceviche": slices of Austrian trout marinated in chilli paste, topped with a tangy grapefruit sabayon and finished with a delicate basil oil. The service is charming and attentive to every guest's needs and enjoys sharing insights into the finer points of Korean cuisine.
