It takes some nerve to take the name of a neighborhood for your hotel, but the Jaffa is impressive enough to pull it off. This Luxury Collection hotel near the waterfront was designed by architect John Pawson, who converted t 19th-century French Hospital into a thoroughly modern boutique-style luxury hotel, while preserving details from a multitude of eras, all the way to the 13th-century wall that bisects the lobby. The rooms are lavish and visually striking, the pool courtyard is a little slice of heaven — as is the spa — and the signature restaurant, Don Camillo, is an upscale Italian restaurant with a New York accent.
