Repère Sauvage was imagined by Caroline Costagliola Condy and Capucine Châtelier, who wanted to reinvent rural hospitality without losing touch with tradition. Their project took shape at the Manoir de la Forêt, a 19th-century hunting lodge built alongside the Renaissance gate of Fort Girard, once the domain of César de Vendôme, son of Henri IV. Today, the 42-hectare estate spans forest, meadows, and ponds, with sixteen rooms that recall the warmth of a country house. The restaurant highlights local produce with the respect it deserves.
