Go ahead and pinch yourself—you’re not dreaming. Pinch Chinese is really that good. The décor, featuring red metal chairs and birch countertops, is straight-up SoHo, but the food tastes like you’re in the heart of Flushing. The glass-paneled kitchen complete with mask-wearing chefs can veer a bit lab-like, but don't worry, as they're busy making soup dumplings in there. These superlative gems are works of art that taste even better than they look. Pan-fried beef dumplings flaunt just the right balance of crust and chew, while fried rice heaped with bay scallops, blue crab and shrimp is far from your corner takeout joint's usual rendition. Roast duck, carved tableside by the white jacket- and surgeon mask-wearing chef, is a crisp and tender revelation.
