Begin with the meaty and savory mushrooms, buoyed by a white yuzu kosho foam and a hit of acidity thanks to lemon gel cubes. Duck, glazed in lavender honey, is served over a black porridge mixed with stracciatella cheese and squid ink that is positively addictive.
