MICHELIN Guide’s Point Of View

Set within the historic Engine Company 12 firehouse, Spark is the lovechild of a good old-fashioned smokehouse and Caribbean spot. Come here hungry as there are many winning items and it would be a crime to limit yourself. Start with that fry bread served with a trio of toppings, like curried chickpeas, spicy mango chutney and cucumber-red onion relish. Then move on to the tender lacquered chicken, fried three times, or guava-rum oxtail that is marinated for 48 hours and gets at the very soul of this place. Tamarind grilled lamb ribs are a hit, while Wagyu tri-tip in black garlic sauce takes a quality product and delivers next-level flavor. You may even find yourself spooning up bits of mango chow chow long after your stomach has waved the white flag.
