Makoto is a testament to the love between a father and son. The chef, who assumed the top spot when his father passed some years ago, is warm and generous with stories of his father’s passion and sacrifice. This place isn’t about trends and there is a palpable sense of honoring tradition, so make a reservation, dress up and expect to shed your shoes at the door. You won't find à la carte sushi here, but you will be rewarded with a litany of skillfully prepared dishes. Seared Turkish royal sea bass with grilled asparagus and sugar snap peas along with a roasted red pepper sauce displays harmonious balance. Then pan-seared sea urchin with crispy rice cake, burnt nori and kinome leaf, sprinkled with green seaweed, is named a signature for good reason.
