                        The ‘counter kappo’ format was adopted to serve food as fresh as possible from the kitchen. Dried bonito is shaved and dashi is made for the soup right before your eyes. Fish is char-grilled and roasted on straw. Keeping a watchful eye over his kitchen, the chef serves each dish at just the right temperature and with an alluring aroma. Fresh-cooked rice can be savoured topped with raw egg or seasoned minced chicken.
