Bib Gourmand: good quality, good value cooking
Hiroshi Yanagisawa is a travelling soba artisan. Visiting farmers throughout Japan, he chews buckwheat groats in the field and makes juwari soba when he finds buckwheat that impresses him. He currently works with buckwheat from two regions. Customers can compare the taste and aroma of different types of soba, such as freshly harvested buckwheat or indigenous buckwheat. Don’t miss the distinctive shuko, like handmade tofu and natto and beef and daikon simmered in bourbon. This is a refreshingly original soba restaurant.
