There are many reasons why this counter is always full. Shuko is cool, fun and there is no need to take out a loan for dinner. For approximately $150, expect a thoroughly impressive sushi omakase that stands out from the crowd. This should be no surprise, as both of the chefs—Nick Kim and Jimmy Lau—have backgrounds that include extensive work with Masa Takayama and his American empire of high-end sushi counters.The procession may begin with a bit of hamachi accompanied by slivered myoga and tempura crumbs before moving on to an array of nigiri crafted before your eyes. Then indulge in lean tuna, tender dorado seabream with pickled plum and much, much more. Close with an ace hand roll combining shiso and umeboshi wrapped in a slice of lotus root.
