Black floors, stark white tables and white chairs. Bellwether is simple-chic, though don’t let that fool you as its kitchen is seriously ambitious, turning out a seasonal, all-out menu that swings in different directions and is packed with creativity.
Griddled halloumi with raw sugar snap peas bathed in a wild garlic vinaigrette is a standout starter, while grilled blowfish tails are smoky and tender, coated with black sesame- and herbed-citrus breadcrumbs. A smear of black garlic aïoli adds extra oomph. But the do-not-miss dish? Braised Colorado lamb neck. Brined for three days, the fork-tender meat is then enhanced with sumac gravy, butter bean hummus and a garlicky sauce to form a hearty dish that could feed at least three hungry souls.
