MICHELIN Guide’s Point Of View

Housed in the EMC2 Hotel, this chef-driven dining room has an eclectic menu and mid-century vibe that is perfectly attuned to its namesake, the great Dr. Einstein. The sky-high copper bar is stacked with glass specimen jars and attended by mad-scientist mixologists, assembling clever sips like Call Your Mother (mezcal, green chili vodka, and celery root). Meanwhile, the décor resembles a chic library, with leather-bound tomes and vintage filing cabinets. Dishes are executed with originality and scientific precision—from a chilled celery root- and crab-custard topped with pickled Nardello peppers, blood orange and a curry vinaigrette, to rabbit sausage with rye berry risotto.

Quirky sweets include a cucumber parfait with peanut meringue and strawberries.
