MICHELIN Guide’s Point Of View

Barely six months into service and this ambitious, 12-seat counter is already off to an impressive start. Chef Jake Bickelhaupt is back behind the stoves and is the primary tour de force prepping, cooking, and plating an extensive tasting menu that pairs exceptional ingredients with thoughtfully composed sauces. The ideas are wholly his own and lean heavily on Japanese influences. Winning plates include poached sturgeon in caviar sauce topped with a weave of fried Yukon gold potato strings; while A5 Miyazaki Wagyu is seared three times over the binchotan before being set in an ethereal blend of soy sauce aged in Japanese whiskey barrels. Guests may bring their own wine, but the pairing option flaunts well-aged bottles from top-shelf producers.
