Just outside Edinburgh into the East Lothian countryside and you’re already in the late 15th century; Carberry Tower’s foundation was laid in 1480, and it slowly grew over the course of 500 years from the original tower into a grand residence and now a luxury hotel, set on 40 acres of meticulously maintained parkland. The rooms and suites have been modernized, but not too much — the house’s architectural character remains very much intact, alongside all the expected modern comforts. Afternoon tea is a treat, and the Campaign Room Bistro and the Boar Lounge welcome hotel guests and day-trippers alike.
