Behind the term ‘buri’, which could be translated as ‘lemon fish’, hides one of the most interesting Japanese restaurants in Palermo Hollywood! Anyone familiar with Japan and with the challenges faced when setting up a restaurant will appreciate the complexities posed by Buri Omakase, where you have to ring the bell to property 002 in a small office block, and are then escorted by lift up to the authentically decorated dining room with seating for just 6 guests and an exclusive bar, where the bartender prepares both classic and signature cocktails. Chef Marcello Elefoso is inspired more by the traditions of Kyoto than Edomae, hence the prevalence of dishes prior to the nigiri courses, including an excellent miso soup and a creamy chawanmushi (savoury egg custard). For the nigiri, this chef uses high-quality local fish caught by trusted fishermen, most of them aged for a more powerful flavour. They work in two shifts, so try to be on time!
