The menu here goes to epic lengths to present a thorough survey of Chinese regional cooking through photos and essays. Be sure to spend particular time on its many pages, especially those that begin with “Ten Great Privately Reserved Dishes.” One visit here will surely lead to dozens more, with the goal of tasting as much as possible from the vast tome. Their golden-brown Old Shanghai dumplings tucked with a tender pork filling don’t appear until the back of the menu but deserve top billing. Also try clay pots brimming with the vibrant and complex flavors of house-made Chinese charcuterie, salted fish and perfect rice. Crystal chandeliers, white carved seats and silk pillows lend a certain elegance to the dining room.
