Set on the edge of Chinatown, this laboratory-like artisanal factory of ramen draws a crowd who come here solely to savor these handmade noodles in slowly simmered broths. Order at the register, then pull up a chair to watch the staff crafting these strands behind the glass-enclosed room. This kitchen is reputed for presenting three styles of ramen as well as a handful of sides during the day. Come dinner though, the dish to beat is tsukemen, whereby the noodles are placed in neat nests on a silver tray for a quick dip in the rich and flavorful broth. Add to that the smoky and tender slices of pork, a perfectly creamy-centered soft boiled egg as well as a sheet of nori, and you have a pleasure-packed, slurp-worthy meal that is the very definition of umami.
