The name itself is a continuation of classic French kitchen hierarchy nomenclature—the initials stand for Chef de Partie—and it displays the same professional service and elegant cuisine as its counterpart. While Chef Syhabout serves both restaurants, this menu features affordable, snack-sized portions unlike next door. Those seeking a more hearty meal can opt for the côte du boeuf prix-fixe. Begin with canapés like brown butter blinis topped with smoked trout roe or popcorn dressed with dashi seasoning. The signature egg with a slow-poached yolk is poised delicately atop smoked cream, while a Japanese-style cheesecake is more sweet than tangy, with a scoop of strawberry sorbet.
