In the heart of Burgundy, Beaune is famous for its annual wine auctions that take place in the prestigious Hospices, famous for their glazed tile roofs. A fervent champion of pedigree Gallic food and fine French wines, Japanese chef Keishi Sugimura, couldn’t have found a town that suits him better. Trained in Japan, the chef excels in the art of the porkpie, which earned him the title of vice world champion in 2013. He meticulously, almost surgically crafts fine seasonal ingredients into classical recipes rich in complimentary flavours, throwing in the odd dash of creativity from time to time: œuf parfait, dashi stock, Japanese wagyu; Corton pigeon served two ways. Also a cook, the chef’s wife pampers guests who are invited to take a seat on the patio in the garden come summertime.
