Despite the arrival of a new chef, the cuisine at Sixteen retains a certain poetry and romance. In fact, dinner here is contemplative, delicious, and never formulaic. Dishes consistently weave French and Italian sensibilities, and showcase Asian ingredients to stunning effect. There are two menu choices here, with optional wine pairings that change dramatically with each season. However numerous the courses, guests still leave with a sense of balance and harmony. While breakfast and lunch are also on offer, it is at dinnertime that this kitchen's talent truly shines. Specifically, its use of herbs and aromatics lightens every taste, so an opening trio of crab is sure to make the most of corn with nasturtium petals and leaves. Then spring may yield delicate Chinook salmon with roasted fiddleheads and sorrel purée, while summer presents a gently cured then briefly torched hiramasa, colorfully arranged with jade-green fennel juice. Located on the 16th floor of the Trump International Hotel, this space impresses by virtue of a glass-enclosed foyer lined with wine bottles, African rosewood, and a Swarovski chandelier that hangs over the dining room like an inverted wedding cake.
